Celery, Peanut Butter and Raisins

I wasn't a huge fan of peanut butter and jelly sandwiches BUT there was something satisfying about the crunch of a celery, the sweetness of raisins and peanut butter that create the perfect combination.

This delicious snack takes me back to my childhood. I wasn’t a huge fan of peanut butter and jelly sandwiches BUT there was something satisfying about the crunch of a celery, the sweetness of raisins and peanut butter that create the perfect combination.

Other than being a tasty snack, it’s unbelievably loaded with vitamins that are crucial for everyone. As adults, it’s probably best to moderate your consumption because it’s high in calories. Luckily for you, high in calories in peanut butter means unsaturated fats or what I like to call “heart healthy”. Meaning you don’t feel guilty eating too much because it’s also reducing your risk of heart disease. Peanut butter is also good for bowel movements, body and brain development, a number of vitamins, minerals and antioxidants. Basically, it’s really good for you!

Peanut butter is nutritious for you but you still have to keep an eye out for the unhealthy brands which are the ones not made with 100% peanuts. Some companies add sugar, salt and hydrogenated oil. Hydrogenated oil keeps the peanut oil from separating and improves shelf life. You’ll notice in natural peanut butter  (100% peanuts) there will be oil at the very top and that’s because it doesn’t include hydrogenated oil. The negative side is it turns your peanut butter into a trans fat which is commonly found in other unhealthy processed foods.  Peanut butter spreads tend to only have 60% peanuts. Check the label to ensure you’re choosing the healthiest alternative for you PLUS there are other options such as almond butter or protein spreads.

Sofia tried “Ants on a Log” for the first time and she loved it! Well, the second piece she just licked the peanut butter off the celery but I think this will be a snack that she’ll remember like I have. I’m an adult and I still love this childhood snack! Thanks for reading!

Prepare the ingredients:

Wash and dry the fresh produce. Cut off the ends of the celery stalk and cut each one into 3 equal parts. In total you'll have 12 logs.

Assemble the ingredients:

To the celery, add a layer of peanut butter and garnish with raisins. Enjoy with a glass of milk!
